Quinoa Salad



The search for something tasty to eat brought me to studiokook.nl today. I wanted to eat healthy, easy and light because the weekend with a BBQ twice and the necessary IPA beers might be a bit too much, although I don't like to admit it. So something healthy on my plate seemed like a good plan and it was surprisingly tasty.

what do you need for 1 person?

  • 40 to 70 grams of quinoa
  • 1 large beetroot (cooked)
  • hand of arugula
  • 50 grams of feta
  • salmon fillet (how much you like)
  • 1 tablespoon of honey
  • 1 tablespoon of capers
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • pepper and salt

time required: 25 minutes

Boil the quinoa for 10 minutes, drain and then let it rest for 10 minutes with the lid on the pan for a tastier result.

Meanwhile, grate the beet with a fine grater and when the quinoa is ready it can be stirred together. Stir in the olive oil and lemon juice.

Sprinkle the salmon with salt and pepper and fry the salmon in a frying pan until cooked. Brush the salmon with the honey and turn the salmon a few more times to let the honey caramelise.

Mix the quinoa mixture with the arugula and capers. Divide this over a plate and put the salmon on it and divide the feta over the whole.
